Citrus Avocado Taco Dressing


Ingredients

1/2 cup 
lemon juice
1 cup diced tomatoes
1/2 cup water
2  just ripe avocados
2 tablespoons 
Taco Seasoning
Directions
In a medium mixing bowl, combine lemon juice, tomatoes and water. Peel and dice avocados, then add to mix along with Taco Seasoning. Gently mash until desired texture is achieved.

Creamy Poppy Seed Dressing


Ingredients

1/4 cup tahini (sesame paste)
1/4 cup almond milk
2 tablespoons minced onion
3 tablespoons 
poppy seeds
1 teaspoon minced garlic
3 tablespoons cider vinegar
3 tablespoons 
lemon juice
1 tablespoon 
celery seed
1 teaspoon 
dry mustard
2 tablespoons 
sugar (or a natural sweetener)
1/2 teaspoon 
salt
pinch 
cayenne
3/4 cup safflower oil

Directions
Place all of the ingredients except the oil in a food processor and blend until smooth and well combined. Still processing, gradually add the oil. Refrigerate the dressing in a tightly covered jar and chill until ready to use. Refrigerated and tightly covered, this dressing will keep for up to 1 week.

Fruit Dressing
Ingredients

1 cup yogurt
2 tablespoons orange juice
1 teaspoon 
lemon juice
1 teaspoon 
orange granulated
1/2 teaspoon 
lemon granulated
1 tablespoon honey
1/4 teaspoon 
grated or ground nutmeg
1/8 teaspoon 
ground mace

Directions
Blend all ingredients together in order given. Pour into a container, cover, and place in refrigerator.

Hibiscus Blend Tea

Naturally caffeine free, tart and colorful, hibiscus tea is delightful on its own (hot or cold, sweetened or not) to as the basis of an herbal tea blend. It combines especially well with the green or black teas and with other herbs such as peppermint, rose hips, spearmint, linden leaf and lemongrass. Also try it mixed with juice (such as Cranberry), lemonade or sparkling water for a refreshing spritzer.

Ingredients:

4 Cups Water
4 Teaspoons Hibiscus Flowers
1 Teaspoon Spearmint Leaves
1 Vanilla Bean
3 Cloves

1 Stick of Cinnamon

Directions:

Boil the water and pour over remaining ingredients. Steep for 10 minutes, then strain. Sweeten with honey.

A Recipe from the Old Days

Did you know that Brad once owned a natural foods restaurant? A long time ago, back in the '70's, in Greensboro, NC, Brad and his friends opened a natural foods and vegetarian restaurant. One of their specialties was catering for the rock and roll bands of the day that performed at the Greensboro Coliseum. Some of his favorite and most memorable customers were The Who, The Grateful Dead, Jackson Brown, Yes, Heart, and many more. They loved his vegetarian cooking. Here is one of the favorite recipes from the restaurant.

Country Gravy

3/8 C Rice Cream (Finely ground short grain rice)
1/8 C Wheat Free Tamari
1/8 C Canola Oil
1/4 Onion, large, chopped up
2 C Water
1/4 C Nutritional Yeast

Heat 1 5/8 C of the water on stove top to just below boiling.
Blend rice cream, tamari, canola oil and onion together along with 3/8 C of the water. When well blended, slowly stir this mixture into the hot water. Continue stirring until the combination thickens into a gravy consistency and then stir in the nutritional yeast . Stir until well blended and clumps of yeast have been broken up and smoothed in.

Serves 3 – 4
